PORK MEDALLIONS

Ingredients

2 pork tenderloins, trimmed of any fat and silver skin
2 Tbsp. olive oil
1 Tbsp. Perfect Pork Rub & Seasoning (Retired)
1/3 cup Maple Bourbon Apricot Glaze (Retired)
3 Tbsp. apricot jelly or jam

Instructions

Rub pork tenderloin with olive oil and sprinkle with Perfect Pork Rub & Seasoning (Retired). Rub seasoning into pork and refrigerate for 2 hours. Remove from refrigerator and let stand at room temperature for 30 minutes. Preheat BBQ to medium heat. Grill pork for approximately 15-20 minutes or until slightly pink in the middle and/or internal temperature reaches 145°F. Combine Maple Bourbon Apricot Glaze (Retired) and apricot jelly. In the last five minutes of grilling brush pork tenderloin with sauce. To serve, cut pork into medallions and drizzle with additional sauce.
